About

This underground bar and distillery focuses on craft cocktails, with a laboratory-style approach to experimenting with flavours and creating inventive drinks. It operates as a speakeasy, with an unmarked entrance adding to its discreet charm. The team is known for sharing insights into the history and creation of their drinks, including gin and absinthe. Live music features occasionally, enhancing the experience. The "Lollipop Meltdown" cocktail, which incorporates a dissolving lollipop, is a distinctive option. Non-drinkers can also enjoy mocktails crafted with the same attention to detail. The space doubles as a distillery, adding an educational element to visits.

Project Halcyon is for craft cocktail lovers. I’ve never come across a bar that puts more care or creativity into their drinks. In their laboratory, they are always working on new ideas and not afraid to try flavors that seem far-fetched for a cocktail then absolutely deliver. We were very pleased to have a tour from the lovely Nathan whose pride in his work is delightfully evident. The space itself has jazzy 1920s vibes without being precious and it’s suited for a night out with a group or a more intimate date where you’d like to hear what your companion is saying. All in all, we had a fabulous experience and will no doubt be returning.

We have been meaning to go here for a while and finally managed to and were not disappointed at all. From being greeted and seated at the door from the fab waiters who explained the history of the bar and the drinks they make. The bar decor is so I’ve and gives vibes of a subterranean bar way back when. There was a jazz trio playing fab music and the music wasn’t too loud so we were still able to chat. Yes it’s pricey, but it’s fully worth the money, cocktails were priced at £15 but I think you can see what you are paying for. I’d love to keep it a secret, but I also think it’s worth shouting about
